Nunca me propus a escrever livros de receitas. Na verdade, só aprendi a cozinhar há seis anos, quando meu casamento com meu marido amante da cozinha acabou e as crianças e eu ainda precisávamos comer. Como escritora de culinária de longa data aqui em Denver, comer a comida mais deliciosa nos melhores restaurantes da nossa cidade sempre foi uma prioridade; cozinhar eu mesma não.
Mas alguns anos atrás, tive uma ótima ideia de presente para minha tia: um livro de receitas que combinasse todas as melhores receitas de sobremesas, de vários chefs e padeiros, em uma única coleção. Quando não consegui encontrá-lo, criei-o. “50 Things to Bake Before You Die” ressoou com outros padeiros caseiros amantes de sobremesas, então escrevi uma continuação, “30 Breads to Bake Before You Die”, com receitas de padeiros incríveis como Duff Goldman, Dominique Ansel e Joanne Chang. Os padeiros do Colorado também compartilham receitas no livro, incluindo o pão pita de Alon Shaya (Safta), a baguete de Shawn Bergin (Bakery Four), os muffins ingleses de Caroline Glover (Annette), o sourdough de centeio marmorizado de Zach Martinucci (Rebel Bread) e a crosta de pizza de Claire Czarnecki (Pizzeria Alberico).
Em março, tenho outro livro saindo, “The Phone Eats First: 50 of Social Media’s Best Recipes to Feed Your Feed … and Then Yourself”, uma compilação dos pratos mais saborosos e famosos do Instagram e do TikTok. Ajuda que essas não sejam minhas receitas; estou escrevendo como um crítico de restaurantes, procurando as sobremesas, pães, cafés da manhã, jantares e muito mais mais deliciosos.
Como estou escrevendo para todos os níveis de cozinheiros, provavelmente até ajuda o fato de eu não ser uma profissional. Sou simplesmente uma garota com massa no cabelo e um desejo ardente por bolo de chocolate babka king. Sério, se eu consigo fazer, você consegue.
Passar boa parte dos últimos três anos escrevendo e tirando fotos para livros de receitas certamente acelerou todo o meu aprendizado de cozinhar. Ganhei mais conhecimento de cozinha do que nas minhas três décadas anteriores. Aqui estão as principais lições que aprendi escrevendo livros de receitas.
Nem todas as receitas são criadas iguais. Eu costumava pensar que era só eu, que a razão pela qual uma receita aleatória da Internet não dava certo era porque eu fiz algo errado. Porque eu era um péssimo cozinheiro. Mas a questão é que escrever receitas é um conjunto de habilidades separado de cozinhá-las, e alguns chefs simplesmente não são tão bons nisso. (E no buraco negro que são os blogs de comida da Internet, nem todos os blogueiros e influenciadores são tão bons cozinheiros quanto eles podem pensar.)
Este foi um grande momento aha para mim, perceber que o motivo de algumas receitas não darem certo é porque elas não são boas receitas. Para uma receita ser ótima, ela deve ser clara, concisa, completa e fácil de seguir. Qualquer um deve ser capaz de pegar os mesmos ingredientes, seguir as instruções e terminar com algo saboroso. Ainda é definitivamente um erro do usuário para mim às vezes, mas perceber que nem sempre eu era o problema foi libertador.
É falso! Quando chega a hora de fotografar as receitas para um livro de receitas, a comida se torna apenas um adereço. As sessões de fotos foram de longe a parte mais estressante para mim; tentar cozinhar e assar tudo para parecer perfeito no nível de um livro de receitas foi intenso. Mas um dos meus fotógrafos me contou um segredo: algumas das coisas que eu estava vendo nos livros de receitas de outras pessoas, dignos de babar, são falsas.
Para algumas sessões de fotos de alto orçamento com estilistas de alimentos, eles farão coisas como pincelar óleo (alguns até usam spray de cabelo) para fazer o frango realmente brilhar; pintar frutas vermelhas com batom para dar mais cor; despejar óleo de motor sobre as panquecas em vez de xarope pegajoso; e misturar cola em queijo derretido para obter o melhor puxão de queijo. Meio nojento, mas também meio lindo.
Eu posso fazer muito mais do que eu acreditava. Eu estava com tanto medo de fazer os macarons em “50 Coisas para Assar Antes de Morrer”. Eu nunca tinha feito antes, e tinha ouvido falar o quão temperamentais eles podem ser. Eu não achava que havia alguma possibilidade de os meus ficarem assim, mas minha filha de 9 anos disse algo que me deu perspectiva. “Pelo menos você está tentando”, ela me disse, “Essa é sua conquista”. Eu ainda penso nisso quando estou intimidada para fazer algo novo. Nem tudo será perfeito, mas até mesmo nossas bagunças na cozinha terão um gosto melhor do que não tentar. (Ah, e os macarons ficaram ótimos na minha primeira tentativa!)
É surpreendentemente fácil trabalhar com chefs famosos. As receitas para meus livros de receitas vêm de muitos cozinheiros e padeiros profissionais, alguns dos quais são meio famosos. As pessoas sempre me perguntam se foi difícil obter receitas de pessoas como Christina Tosi e Duff Goldman, e o fato é que esse nível de chef celebridade tende a ser mais fácil de trabalhar do que, digamos, um influenciador de comida iniciante que quer controle criativo total e um cheque gordo. (Nota para aspirantes a autores de livros de receitas: a menos que você já seja um desses chefs celebridades, você provavelmente não vai ficar rico, ou mesmo classe média, com isso!)
Na minha experiência, quanto mais famoso o chef, maior a equipe de pessoas querendo me dar o que preciso. Além disso, provavelmente porque eles já são tão bem-sucedidos, eles estão mais dispostos a compartilhar suas receitas. Eu aprecio todos que me dão receitas para os livros de receitas, mas os nomes maiores, surpreendentemente, são os mais fáceis de trabalhar.
Descobri que gostava de coisas que achava que odiava. Essa é a beleza de ser forçada a cozinhar certas receitas, e por isso que agora eu adoro folhear livros de receitas e fazer quase todas as receitas, mesmo que eu tenha certeza de que não vou gostar. (Geralmente estou errada.) Eu me orgulho de experimentar uma grande variedade de comidas, mas até começar a fazer livros de receitas, eu não gostava de frutas na sobremesa. Eu sempre fui mais uma pessoa de chocolate do que de torta de frutas, mas tudo mudou com as barras de limão.
Claro, isso não é nenhuma surpresa para pessoas normais que aprenderam isso antes de mim, mas barras de limão são deliciosas! Eu me amaldiçoo por desperdiçar os primeiros 35 anos da minha vida sem elas, e elas abriram meus olhos para outras sobremesas de frutas incríveis.
