Setembro sinaliza o fim do verão, mas felizmente, não o fim dos produtos de verão. Muito disso está no auge agora. Certamente os tomates estão, e os pimentões doces. Ambos precisam de toda a estação para atingir sua suculenta maturação. Eles valem a espera, perfeitos para montar um menu em torno deles, assim como as ameixas do fim da estação, que agora estão chegando. Este menu emprega todos eles e, o melhor de tudo, é muito factível.
Para começar, um carpaccio de dar água na boca feito de tomates maduros. Embora tradicionalmente à base de carne, o carpaccio — que dizem ter sido nomeado em homenagem a Vittore Carpaccio, o pintor veneziano conhecido por seu uso do vermelho escuro — pode se referir a qualquer prato que seja apresentado em fatias finas e espalhado no prato. Mas a receita aqui é muito mais do que um mero prato de tomates fatiados. O segredo é usar tomates realmente maduros, não importa a cor, mas os grandes e vermelhos são ideais.
Use seu melhor azeite de oliva extravirgem para o molho, que também contém chalotas e alcaparras salgadas, um toque de alho e um toque de anchova. Finalize com um punhado de folhas de manjericão rasgadas para um primeiro prato de fácil execução.
Para um prato principal sazonal, peixes firmes e carnudos como robalo listrado ou halibute são uma boa escolha para acompanhar a colheita de pimentões doces. É bom usar pimentões comuns, mas, de preferência, encontre alguma variedade maravilhosa e bem torneada, como o curvilíneo corno di toro, disponível em tons de vermelho, amarelo e laranja. Uma variedade de cores cria uma interpretação dramática. Cozinhar todos os pimentões lentamente em azeite de oliva, com cebola e alho, temperados com pimenta caiena e páprica defumada, intensifica sua doçura.
Para aproveitar ao máximo os pimentões e evitar restos estranhos, corte-os ao meio no sentido do comprimento, até o talo, e depois remova os talos, as nervuras e as sementes (em vez de cortar primeiro as partes superiores e inferiores, como algumas receitas recomendam).
Recomendo preparar a mistura de pimentões com bastante antecedência, até mesmo um dia antes, para que as únicas partes do prato que precisarão ser preparadas na hora sejam preparar o peixe e picar as ervas de última hora.
Para finalizar, coloque aquelas ameixas do fim do verão — especialmente as pequenas italianas, roxas escuras e de polpa amarela, que são uma delícia e altamente recomendadas. (Se você não as encontrar, outros tipos de ameixa ou até mesmo pluots funcionarão para esta sobremesa.)
Simplesmente divida-os ao meio e arrume-os com o lado cortado para cima em uma forma de torta, depois espalhe uma cobertura crocante com aroma de amêndoa, tipo streusel, e leve ao forno. Sirva morno ou em temperatura ambiente, com uma colherada de crème fraîche ou creme levemente batido levemente adocicado para o exercício final de culinária sazonal simples, entregando sabor real com facilidade.
Carpaccio de Tomate
Na verdade, não muito mais do que um prato de tomates fatiados, a chave para este prato são tomates realmente maduros, do tipo que você compra no mercado de produtores no fim do verão. 1: Lave e retire o miolo dos tomates. Com uma faca serrilhada, corte-os o mais fino possível e, em seguida, cubra uma travessa de ponta a ponta com uma única camada de fatias.
2: Em uma tigela pequena, misture anchova, alcaparras, chalota e alho. Adicione uma boa pitada de sal e misture para misturar. Adicione vinagre e deixe em infusão por 10 minutos, depois misture o azeite de oliva. Prove e ajuste o tempero.
3: Para servir, polvilhe os tomates levemente com sal, então coloque o molho generosamente e uniformemente sobre tudo. Moa pimenta sobre o prato e decore com folhas de manjericão.
Peixe assado com pimentões cozidos lentamente
Peixes carnudos como robalo listrado, peixe-espada e halibute são boas escolhas para combinar com a colheita de vegetais do fim da estação, especialmente pimentões doces. 4 filés de robalo ou linguado sem osso (com ou sem pele) (cerca de 2 libras)
Sal e pimenta preta
1/2 colher de chá de sementes de coentro
1/2 colher de chá de sementes de erva-doce
1 colher de chá de raspas de limão (de 1 limão)
2 colheres de sopa de azeite de oliva extra virgem, para untar a forma
Para os pimentões:
3 colheres de sopa de azeite de oliva extra virgem
1 cebola grande cortada em meias-luas de 1/4 de polegada de espessura
6 pimentões de várias cores, cortados em fatias de 1/4 de polegada de espessura
4 dentes de alho picados
1/2 colher de chá de páprica defumada
1/2 colher de chá de pimenta caiena moída
1 colher de sopa de salsa italiana picada
1 colher de sopa de cebolinha picada
INSTRUÇÕES
1: Tempere o peixe dos dois lados com sal e pimenta. Usando um moedor de especiarias ou um pilão, triture as sementes de coentro e erva-doce até virar pó. Combine com raspas de limão e esfregue a mistura em cada filé. (Neste ponto, você pode cozinhar imediatamente ou refrigerar por até 4 horas e depois levar à temperatura ambiente para cozinhar.)
2: Prepare os pimentões: Coloque uma panela holandesa ou uma panela grande e pesada em fogo médio-alto. Adicione 3 colheres de sopa de azeite de oliva. Quando o óleo estiver ondulado, adicione a cebola e tempere com sal e pimenta. Cozinhe, mexendo, até a cebola começar a dourar e amolecer, cerca de 5 minutos. 3: Para cozinhar o peixe, aqueça o forno a 375 graus e coloque uma panela grande de ferro fundido em fogo médio. Adicione 2 colheres de sopa de azeite de oliva e gire para cobrir o fundo da panela. Coloque o peixe na panela em uma camada e cozinhe por 4 a 5 minutos. Vire os filés com uma espátula e coloque cuidadosamente a panela no forno, descoberta. Asse por 3 a 5 minutos, até que o peixe esteja firme e começando a descamar. Polvilhe o peixe com salsa e cebolinha e sirva com os pimentões.
Crumble de Ameixa e Amêndoa
Ameixas do fim do verão, especialmente as pequenas, roxas escuras, de polpa amarela, chamadas ameixas italianas, são uma delícia. Elas são úteis para bolos e tortas, mas aqui, elas são assadas com uma cobertura com aroma de amêndoa, tipo streusel.

INGREDIENTES
2 1/2 libras de ameixas roxas pequenas (cerca de 12)
Açúcar granulado, para polvilhar
1 xícara/128 gramas de farinha de trigo
1/2 xícara/110 gramas de açúcar mascavo claro
1/2 xícara/113 gramas de manteiga sem sal, cortada em pedaços
1/2 xícara/54 gramas de amêndoas laminadas
1/4 colher de chá de extrato de amêndoa
Pitada de sal
Creme fraiche ou creme de leite batido levemente adocicado (opcional)
INSTRUÇÕES
1: Aqueça o forno a 375 graus. Lave as ameixas e corte-as ao meio com uma faca de descascar. Remova e descarte os caroços. (Ameixas maiores podem ser cortadas em quatro.)
2: Coloque as ameixas com o lado cortado para cima em uma forma de torta funda de 23 a 25 cm. (Não tem problema se elas não couberem todas em uma camada.) Polvilhe levemente com açúcar granulado.
3: Faça a cobertura: Em uma tigela média, coloque a farinha, o açúcar mascavo, a manteiga, as amêndoas, o extrato de amêndoa e o sal. Usando as pontas dos dedos, trabalhe a mistura até que ela se assemelhe a migalhas ásperas do tamanho de ervilhas.
4: Coloque a cobertura frouxamente sobre as ameixas, cobrindo toda a superfície. Asse por cerca de 40 minutos, até dourar bem e escorrer.
5: Deixe esfriar um pouco ou sirva em temperatura ambiente com uma colherada de creme de leite fresco ou creme de leite batido levemente.
