Os principais motivadores para decisões alimentares permaneceram os mesmos por mais de uma década, de acordo com a pesquisa da IFIC. Em ordem, eles são sabor, preço, saudabilidade e conveniência, com a sustentabilidade ambiental sendo uma prioridade muito menor para a maioria. A saudabilidade só se torna mais importante do que o preço quando os entrevistados têm renda alta — e quando isso acontece, o sabor se torna ainda mais importante.
Pesquisas mostram que os consumidores aplicam esses valores às decisões de carrinho de compras em questão de segundos enquanto andam pela loja.
Idealmente, a comida pode equilibrar o sabor com a saúde para tornar essas decisões mais fáceis. A Cargill, sediada em Minnetonka, está constantemente pesquisando maneiras de tirar a culpa dos prazeres culpados e recentemente desenvolveu uma barra de sorvete à base de plantas com muito sabor, pouca gordura e 70 calorias.
“A saúde continua sendo uma área de foco fundamental”, disse John Satumba, líder de P&D de indulgência da Cargill. “Mas, no final das contas, também quero ter certeza de que estou apenas me divertindo quando estou comendo meu chocolate, meu sorvete.”
Regina Draper, cientista de alimentos da Cargill e gerente de P&D de laticínios e alternativas aos laticínios, concordou que “o sabor é rei”.
